To reduce risk of injury or damage to the machine
Use only grounded electrical outlets matching the nameplate-
rated voltage.
Use machine in a flat, level position.
Do not use an extension cord with this machine or plug it into a
power strip or multi-outlet power cord.
Unplug machine before cleaning or moving and when not in use.
Do not spray controls or exterior with liquids or cleaners.
Do not clean the machine with steel wool.
Keep machine and power cord away from open flames, electric
burners, and excessive heat.
Do not operate unattended.
Do not operate if machine is damaged or malfunctioning.
FUNCTION AND PURPOSE
This machine is intended to vacuum seal food in commercial
kitchens. It is not intended for household, industrial, or laboratory
use.
UNPACKING THE MACHINE
1. Remove all packing material and tape, as well as any
protective plastic; dispose of in an environmentally-
responsible way when no longer needed.
2. Clean any glue residue left over from the plastic or tape.

CLEARANCE AND ENVIRONMENT
NOTICE: Never place the machine near a heat source; this can
damage the lid.
6" (15 cm) clearance is required on all sides and 15½" (39.4 cm)
above the machine for the lid to fully open.
Ambient temperature must be between 41-86 °F (5-30 °C).

INSTALLATION
NOTICE: Tilting could allow oil to flow out of the pump and
cause damage to the machine.
NOTICE: Running the machine without oil or insucient oil
will cause damage and void the warranty.
NOTICE: Using voltage other than the nameplate-rated voltage
or modifying the power cord or electrical components will
damage the machine and void the warranty.
1. Place the machine on a flat, stable surface.
2. Ensure control panel is accessible for operation.
3. Install the included 4" (10.2 cm) legs; ETL Sanitation requires
their use.
4. Check the Oil Gauge Window at the back of the machine to
verify level is between the minimum and maximum lines.
5. Plug the machine into a properly-grounded electrical supply
matching the nameplate rating.
6. Run Pump Conditioning program — see OPERATION.

A. Lid—begins sealing when closed; auto opens when done.
B. Chamber—holds the bag of food for sealing.
C. Seal Bar—seals the bag of food.
D. Control Panel—turns machine ON and OFF, allows program
selection, and displays current program and mode.
E. Lid Retainer—locks lid into place (not pictured).
F. Oil Inspection Window— shows the current oil level.
G. Seal Pad—is where the Seal Bar presses to close the bag.

A. Program Display—identifies the program in use.
B. Program Button—allows selection of Liquid Control and
customizable programs 1–9.
C. Reprogram Button—allows you to edit and save programs.
D. Pump Conditioning Program Button—runs the program.
E. Function LEDs—displays the stage of sealing.
F. Decrease/Cancel Button—decreases vacuum pressure,
vacuum plus or seal time. Also cancels the cycle.
G. On/O Button—turns the machine on or o.
H. Vacuum Gauge—indicates vacuum pressure to provide a
check for proper functionality.
I. Increase/Stop Button—increases vacuum pressure, vacuum
plus or seal time. Also stops the vacuum.
J. Display—displays codes to indicate when a program is active
and when there is an issue.
K. Function Select Button—allows setting selection and
confirmation.
OPERATION
NOTICE:
Do not pack products that can be damaged.
To reduce condensation and corrosion risk for the pump, cool
products prior to packing.
When packing food, always select a program that includes
Liquid Sensor Control.
See PACKING LIQUIDS AND MOIST FOODS for these items.
Machine should be used a maximum of five hours daily.
Allow a minimum of 15 seconds between packing cycles.
Do not exceed 60 seconds of vacuum time.
After an hour of use, let machine cool to ambient temperature.
Lid Retainer secures lid only when machine is not in use.
Turn Machine On
1. Rotate the lid retainer so it is not covering the lid.
2. Press the On/O Button; software revision codes will display.
3. If machine has not been used recently, run the Pump
Conditioning Program per the Cleaning section.
Select a Program
NOTICE: For food packing, use a program with Liquid Sensor
Control. Refer to PACKING LIQUIDS AND MOIST FOODS.
4. Press until the desired program number displays. See the
table on the following page for descriptions.
